A Day-Off Lunch

I used to make this lunch for myself a lot when I was in college.  It's an easy way to use up various items you have in your kitchen, and just luxurious enough to feel like you're making yourself a fancy lunch.  Tartines are a perfect snack for in between classes or a meal when you've got a day off from work.

To make it, turn on your broiler (or toaster oven) and let it heat up.  Lightly toast two slices of bread, then take it out and spread with goat cheese.  Sprinkle slices of basil on the cheese, then place cut cherry tomatoes on top, face up.  Add a pinch of kosher salt and fresh ground pepper, than place into the broiler or toasted oven for about 5 minutes, until the cheese is melted but the bread has not burned.  Enjoy as you would pizza or with a fork. 

Obviously, this recipe can be altered in many ways, depending on what you have in your refrigerator.  One of my favorite options is to use manchego cheese and chopped up dates - put the dates underneath the cheese for easy eating.  So savory and wonderful!
